การฝึกกินข้าวกล้องออแกนิค ( เกษตรกรจังหวัดสุรินทร์ปลูกข้าวอินทรีย์ )
1. คนที่เพิ่งหัดกินข้าวกล้อง ( ต้นข้าวออร์แกนิค
) อาจใช้วิธีง่ายๆ คือนำข้าวกล้องผสมกับข้าวขาวในอัตราส่วน 1 : 2 โดยแช่ข้าวกล้องก่อนนำไปหุงรวมกับข้าวขาว เพื่อจะได้สุกพร้อมๆ กัน และค่อยๆ เพิ่มปริมาณข้าวกล้อง จนเปลี่ยนเป็นข้าวกล้องทั้งหมด ท่านก็จะกินข้าวที่ได้คุณค่าอาหารอย่างเต็มที่
2. การกินข้าวกล้องก็คือควรกินขณะยังอุ่นๆ โดยทั่วไป พอข้าวสุก ทิ้งไว้ให้ข้าวระอุประมาณ 5-10 นาทีแล้วควรรีบกิน ข้าวจะนุ่มกินได้ง่าย และให้ค่อยๆ เคี้ยวพอละเอียด จะได้รสชาติหวานอร่อยของข้าวกล้อง ตาม จากนาข้าวเคมีสู่นาข้าวออร์แกนิค
3. ควรกินข้าวกล้องที่สุกแล้วให้หมดในมื้ออาหารนั้น เพราะข้าวกล้องบูดเสียได้ง่ายกว่าข้าวขาวทั่วๆ ไป
วิธีหุงข้าวกล้องอินทรีย์ เส้นทางผลิตข้าวออร์แกนิคสุรินทร์
1. ก่อนซาวข้าวควรเก็บสิ่งแปลกปลอมออกเสียก่อน และซาวข้าวเบาๆ ด้วยเวลาสั้นๆ เพียงครั้งเดียว เพื่อไม่ให้วิตามินสูญเสียไปกับน้ำซาวข้าว
2. การหุงข้าวกล้องนั้น ต้องใส่น้ำมากกว่าหุงข้าวขาว การหุงข้าวกล้อง 1 ส่วนจึงควรเติมน้ำประมาณ 2-3 เท่า ถ้าจะให้ประหยัดเวลาหุง ควรแช่ข้าวกล้องก่อนประมาณครึ่งชั่วโมง วิธีนี้อาจทำให้สูญเสียวิตามินบางอย่างที่ละลายน้ำไปบ้าง แต่ไม่แนะนำให้แช่ข้าวเป็นเวลานานๆ โดยเฉพาะข้าวที่มีสี แต่ถ้าจำเป็นต้องแช่ข้าว แนะนำให้ใช้น้ำที่แช่ข้าวนำกลับไปใช้ในการหุ้ง เพื่อลดการสูญเสียสารต้านอนุมูลอิสระในข้าว โดยเฉพาะข้าวสี
3. สำหรับข้าวใหม่หรือข้าวเก่านั้น จะมีผลต่อการหุงต้มเช่นกัน เพราะข้าวใหม่เมื่อหุงสุกจะมีลักษณะเมล็ดข้าวติดกันมาก ส่วนข้าวเก่าเมื่อหุงสุกการติดกันของเมล็ดข้าวจะน้อย เนื่องจากข้าวเก่าเมล็ดข้าวจะแห้งกว่าข้าวใหม่
เหตุนี้จึงทำให้บางท่านหุงข้าวแล้วบอกว่าใช้น้ำมากเท่าเดิมทำไมข้าวจึงแฉะหรือร่วน ซึ่งก็ต้องถามผู้ขายว่า เป็นข้าวเก่าหรือข้าวใหม่ ส่วนจะให้แฉะหรือร่วนแล้วแต่จะชอบ ผู้หุงข้าวจึงต้องใส่น้ำให้เหมาะสมหรือต้องใช้ศิลปะในการหุงเช่นกัน
